Fusion Noodle Bar
If you're ever wandering through the heart of Southampton and craving something bold, spicy, and deeply satisfying, Fusion Noodle Bar on 15-16 St Mary St is the kind of spot that keeps regulars loyal and newcomers instantly hooked. This place doesn’t just serve food-it throws a flavor party that blends Southeast Asian classics with a street food-style twist, and the results are unforgettable.
From the moment you walk in, the warm, unpretentious vibe sets the tone. The interior is casual and lively, making it perfect for solo diners grabbing a quick bite, lunch meetings, or even a relaxed dinner date. Accessibility is considered with a wheelchair-accessible entrance, and whether you're dining in, taking away, or getting delivery, the team runs a tight, efficient ship.
Now, onto the good stuff: the food. Their menu reads like a greatest hits of Southeast Asia, with a Malaysian heart and a few Chinese and Thai detours. One of the standout signatures has to be the Nasi Lemak-a rich, coconut rice dish with sambal, peanuts, anchovies, and egg. It’s the kind of plate that satisfies from every angle: creamy, crunchy, spicy, and soulful.
Another heavy-hitter is the Curry Laksa, which balances spicy coconut broth with rice noodles, prawns, and tofu, delivering deep comfort in a bowl. The Malaysian Curry Chicken is a must-try too-tender chunks of chicken smothered in aromatic curry sauce, best mopped up with jasmine rice.
The Peppercorn Chicken Bites and Salt and Pepper Chicken Wings come hot and crispy, with just the right kick of chili and garlic-ideal for sharing, or not. If you’re more into noodles, the Pad Thai and Mee Goreng both come packed with bold wok-hei flavor and generous portions of protein and veg. And don’t overlook the Fried Rice Vermicelli with Salted Fish-an umami-rich gem with that funky, salty edge that keeps you digging back in.
Seafood lovers won’t be left out either. The Butter Prawn is a delight, with golden crispy prawns glazed in a creamy, slightly sweet butter sauce that clings to every bite. You can also go for the Prawn Chow Mein or Rice Noodles with Prawns, which deliver on texture and depth of flavor without overpowering the delicate sweetness of the prawns.
Vegetarians and vegans will feel right at home here too. Dishes like Spring Rolls, Hot and Sour Soup, and various small plates cater to plant-based diets without sacrificing flavor. There’s a strong tea selection that regulars rave about, and the drinks list features a well-rounded range of wines, beers, spirits, and coffee to pair with your meal.
And for the finale? Fried Ice Cream. Yes, it’s as indulgent and satisfying as it sounds-crispy on the outside, cold and creamy inside. It’s the kind of dessert that sums up the whole Fusion Noodle Bar experience: playful, bold, and far from boring.
You get the sense this place knows exactly who it is and what it does best. The service is friendly but fast-paced, the dishes are consistently well-executed, and the portions are generous without going overboard. For anyone looking for authentic Malaysian-style comfort food in Southampton with plenty of flavor and zero pretension, Fusion Noodle Bar delivers in all the right ways.

Excellent menu with delicious flavours, all tasting fresh and authentic from Malaysian and Chinese cuisine. Halal options also are available and the staff are super friendly and accommodating. Head Chef and front of house are doing a great job.
OMG, felt like being back in Singapore, but with the best Nasi Lemak I’ve ever eaten. Super authentic, delicious cuisine - anyone wanting Malaysian or Singaporean food should definitely check this place out!
As a Malaysian I approved this restaurant. Make me feel home Authentic Malaysian cuisine I am adding the photos of all the foods I have (dine or take away) from this restaurant. Like their nasi lemak, wan tan ho, malay style pork rib, curry mee broth is good (char siew not my liking), hokkien braised noddle is good, nasi goreng is brilliant, butter chicken is delicious
Roti canai gravy is rich in flavour, with a generous amount of chicken. Char Kway Teow is cooked perfectly; crisp veggies, firm prawns, thinly sliced lap cheong with just enough little black bits to show the cook has taken it in stages so that all ingredients are ready together.
A very authentic Malaysian food restaurant, with friendly and nice staff. Foos are very good and we highly recommend it.
